Favourite Banana Desserts

If you have young kids, you’re likely to have lots of bananas on hand. I mean, why wouldn’t you? Bananas are not only easy to eat on the go, but also filling, and nutritious packed with potassium, vitamin B6, and magnesium. My banana-crazed kid can eat them by the bunch, But there are some weeks where she could care less for bananas. So what do we do with all those extra bananas? Enter: My Favourite Banana Desserts.

Since the Covid-19 lockdown, I’ve been baking a lot more. I’m always looking for creative ways to reduce food waste. This includes turning fruits such as bananas, plums, and pears into something deliciously gorgeous.

One item that we always seem to have on hand are bananas. So many bananas. Bananas galore. If you have bananas on hand, here are some of my favourite banana desserts that I have tried over the past couple of weeks.

Classic Banana Bread

If you have too many over-ripped bananas, then I suggest you make one of my favourite banana desserts: the classic banana bread. Riped bananas which are “bruised” are sweeter the bananas, which are perfect for some delicious banana bread.

I love making banana bread and the wonderful aromas of butter, sweet cinnamon and brown sugar permeating from my kitchen. Perfect for an autumnal day, or any day in fact.  This recipe is easy to make, delicious, and super moist, and always well-loved by my family, neighbours, and friends. It’s perfect for weekend brunches and afternoon tea, or just a simple snack. 


Banoffee Pie

If you have some good-looking yellow bananas and in your pantry are the following items: digestive biscuits, condensed milk, brown sugar, and some high-quality cocoa powder plus some double cream in your refrigerator, then you can whip up a delightful no-bake banoffee pie. 

This classic English dessert is one part crumbly, one part sweet, and one part heavenly soft thanks to the thick crumbly base, a caramel rich layer of condensed milk, luscious bananas all topped with fresh cream and a perfect dusting of cocoa powder.  Whilst it is an easy fool-proof recipe, do allow for ample time for the chilling process especially setting the crust so it doesn’t fall apart. Perfect for an easy summer banana dessert. 


Sticky Toffee Banana Cake 

If you have tons of over-ripe bananas but tired of the same banana bread recipe, try making a sticky toffee banana cake! It’s a happy marriage between the quintessential banana bread and classic sticky toffee pudding.

Instead of the traditional banana bread method, this sticky toffee banana cake recipe is modified for a cake-like result. The banana cake itself is not as dense as the classic sticky toffee pudding, which uses dates and brown sugar as sweeteners. The trademark flavour of the sticky toffee pudding is, of course, black treacle for its distinctive bitter-sweet flavours. The toffee sauce uses a light syrup instead for a less “bitter” flavour but no less delicious.
